It has been used by food manufacturers for over 80 years to inhibit microbial growth. Potassium sorbate is a potassium salt version of sorbic acid, a polyunsaturated fat used to inhibit mold growth. It has been found to be non-toxic even when taken in large quantities and has been used in foods since the 1850's.
